Our third vintage of the California Red Blend consists of 59% Syrah, 35% Grenache, and 6% Mourvèdre. All lots went through a 4-day cold soak before fermentations began. Cold soaking the grapes adds to the complexity of the wine, enhancing the mouthfeel and the richness.
Pure 100% native yeast fermentation, the grapes were fermented in open-top stainless steel fermenters and punched down twice daily until the completion of fermentation. The wine was then aged in 25% new French oak for 18 months.
Wild fruits and herbs comin' at ya! This GSM is exploding with aromas of wild strawberries, wild cherries, and dried oregano, followed by fresh leather and baking spices. Firm tannins are backed by a full body and moderate acidity, making this wine a great pairing with a BBQ bacon burger, teriyaki pork and fried rice, or sautéed mushrooms with herbs de Provence.
