Our grapes proudly come from the Atoosa Vineyard in the RRV and Belden Barns in Sonoma Mountain. Both lots went through a 4-day cold soak before fermentations began. Cold soaking the grapes brings out the color and flavor from the grape skins, increasing the complexity of the wine.
With 100% native yeast fermentation, the grapes were fermented in open-top stainless steel fermenters and punched down twice daily until the completion of fermentation. 20% of these Syrah grapes were whole cluster fermented which means that the grapes were kept on their stems. This provides increased depth and structure of the wine, and a bit of spice flavor as well. The wine was then aged for 20 months in 18% new French oak.
